Our Approach
We test different flour blends, fermentation times and oven temperatures, logging the results of every batch as we go. It’s a constant process of tasting, learning and making the next dough better.
Each batch ferments slowly in the fridge for over 48 hours. That extra time provides that unique flavour, giving it a light, airy structure, creating a base that’s unmistakably ours.
